How can I make beef-style beans and rice from Popeye?
I've been trying to cook red beans and rice, which is similar to that of Popeye, but was never successful[phpbay]
Popeye's Red Beans and Rice Beans: 2 pounds smoked ham hocks 2 cans red kidney beans 15 ounces of 1 / 2 cup water 1 / 2 teaspoon brown sugar 1 / 8 teaspoon salt pinch of garlic powder dash of onion powder rice: 2-1/4 cups water 1 / 4 cup butter 1 / 4 teaspoon salt 1 cup converted rice Method must first make the fat of smoked ham hocks[phpbay] Preheat oven to 375 degrees F and place the pieces of ham in a skillet sling[phpbay] Cover pan with foil and bake for 4 to 5 hours or up to 1 / 4 cup fat made of the hock[phpbay] Combine 1 / 4 cup lard with a 15-ounce red kidney beans, plus liquid in a medium saucepan[phpbay] Add 1 / 2 cup water, brown sugar, 1 / 8 teaspoon salt, garlic powder and onion powder[phpbay] Bring the mixture to boil, reduce heat and simmer for 20 minutes[phpbay] Use a potato masher to crush the beans into a paste-like consistency[phpbay] Add entire contents of the rest tin of beans to the mixture and cook for another 10 minutes[phpbay] Prepare the rice for 4 servings[phpbay] To convert the Uncle Ben's rice 2-1/4 cups water bring to boil[phpbay] Add butter 1 / 4 cup and 1 / 4 teaspoon salt[phpbay] Add 1 cup of rice, reduce heat to low and simmer rice for 20 minutes or until tender (do not lift the lid during cooking)[phpbay] To prepare each Portion tablespoon 1 cup beans in a bowl[phpbay] Add 1 cup of rice on top of the beans and serve[phpbay] Popeye's & Red Beans and Rice (easy method) Serves 6 Ingredients long-grain rice 1 cup Uncle Ben's (cooked) 2 cans red beans 1 teaspoon chili sauce chili powder 1 / 4 teaspoon cumin pinch of garlic salt Mix chili seasoning (optional) Method Cook enough rice to produce 1 cup of cooked vegetables[phpbay] In grains hot pot without letting it boil and add the chili powder, cumin and garlic salt[phpbay] When hot, spoon chili mixture into 6 small dishes, adding a few tablespoons of hot water, rice, cooked per serving[phpbay] Season with chili seasoning mix, if desired[phpbay]
